Ingredients
Eggs, protein powder, oats, nuts, seeds
- 4 large eggs
- /4 cup vanilla protein powder
- 1/4 cup honey
- 1 tsp vanilla
- 1 tbsp lemon juice OR 1 tsp lemon zest
- 2 cups almond milk OR coconut milk (unsweetened)
- 2 cups rolled oats
- 1/4 cup chopped nuts OR sunflower seeds OR hemp hearts OR combination
- 1 large banana
- 1 cup berries (fresh or frozen)
Directions
In a large bowl, whisk eggs, protein powder, honey, vanilla, lemon, and milk until frothy
Add in oats and stir well until evenly combined
Let this mixture sit for 30 minutes
Preheat oven to 350F
Grease a 9”x13” casserole dish with coconut oil (or other)
Fold in chopped nuts, fruit, and sliced banana to mixture
Transfer the mixture to the casserole dish
Bake for 35-40 minutes or until the edges and top are golden brown and centre is set
Remove from oven and cool a bit
Cut into pieces and store in fridge in an airtight container (Will keep in fridge for up to a week!)
Reheats well - can be served hot or cold!
Top with yogurt, applesauce and/or fruit!
